Preparation of Ingredients

    Prepare the Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in cold water for at least 30 minutes, then drain.

    Marinate the Chicken

    In a bowl, combine chicken thighs with salt, black pepper, turmeric, cinnamon, and cumin. Mix well and let marinate for at least 30 minutes.

    Chop the Onion

    Finely chop the large onion and set aside.

    Prepare the Saffron

    Soak the saffron threads in 2 tablespoons of warm water to release their color and flavor.

Cooking

    Cook the Chicken

    In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the marinated chicken and cook until browned on all sides.

    Add Spices

    Add cardamom pods and the soaked saffron (including the water) to the pot. Stir well to combine.

    Add Chicken Broth

    Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 30 minutes until the chicken is fully cooked.

    Cook the Rice

    In a separate pot, bring 4 cups of water to a boil. Add the soaked and drained rice, and cook until the rice is tender, about 15 minutes. Drain the rice and fluff with a fork.

    Combine and Serve

    Layer the cooked rice on a large serving platter, and place the chicken on top. Garnish with chopped pistachios and fresh parsley before serving.
