Main Ingredients

Method

Preparation

  1. 1

    Cook the Bacon

In a large skillet over medium heat, add the bacon slices and cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and place on a paper towel to drain excess fat. Once cooled, chop into small pieces.

  2. 2

    Sauté the Corn

In the same skillet with the remaining bacon fat, add the corn kernels. Sauté for about 3-4 minutes until they start to brown slightly. Remove from the skillet and set aside.

Cooking the Rice

  1. 3

    Combine Ingredients

In a medium saucepan, combine the chicken broth, turmeric, salt, and black pepper. Bring to a boil.

  2. 4

    Add Rice

Once the broth is boiling, add the long-grain white rice. Stir well and reduce the heat to low. Cover the saucepan and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed all the liquid.

Finishing Touches

  1. 5

    Mix in Bacon and Corn

Once the rice is cooked, remove from heat. Fluff the rice with a fork and gently fold in the chopped bacon and sautéed corn. Adjust seasoning with additional salt and pepper if desired.

  2. 6

    Serve

Transfer the yellow rice with bacon and corn to a serving dish. Garnish with chopped fresh parsley and serve with lime wedges on the side.
