Preparation of Chips

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips to form the chips.

    Soak the Chips

    Place the cut potato strips into a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch.

Cooking the Chips

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Chips

    Remove the potatoes from the water, drain, and pat them dry. Carefully add the potato strips to the hot oil in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt while still hot.

Cooking the Steak

    Prepare the Steak

    Season the ribeye steaks generously with salt and black pepper on both sides.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Cook the Steak

    Add the steaks to the hot skillet. Add the garlic cloves and rosemary sprigs. Cook for about 4-5 minutes on each side for medium-rare, depending on thickness. Use a meat thermometer for best results; aim for an internal temperature of 130°F (54°C).

    Rest the Steak

    Remove the steaks from the skillet and let them rest for 5 minutes before slicing.

Serving

    Plate the Dish

    Slice the rested steak against the grain and serve it alongside the hand-cut chips.
