    Prepare the Pork

    Start by laying the pork belly skin-side down on a clean surface. Score the meat in a crosshatch pattern, making shallow cuts about 1 inch apart.

    Season the Pork

    Rub salt, black pepper, minced garlic, chopped rosemary, and sage all over the pork, ensuring the seasoning gets into the cuts. Drizzle with olive oil and rub it in evenly.

    Marinate

    Cover the seasoned pork with plastic wrap and refrigerate for at least 2 hours, or preferably overnight for maximum flavor.

    Preheat the Oven

    Preheat your oven to 450°F (232°C).

    Roast the Pork

    Place the pork belly on a roasting rack in a baking dish, skin-side up. Roast in the preheated oven for 30 minutes to get the skin crispy.

    Add Liquid

    After 30 minutes, reduce the oven temperature to 325°F (163°C). Carefully add white wine and vegetable broth to the baking dish, ensuring it does not touch the skin.

    Continue Roasting

    Roast for an additional 1 to 1.5 hours, or until the internal temperature reaches 145°F (63°C) and the skin is crispy.

    Once cooked, remove the pork from the oven and let it rest for 15 minutes before slicing. Serve with pan juices.
