Base Ingredients

Savory Filling

Method

Prepare the Dough

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour and salt.

  2. 2

    Add Water

Gradually add water to the dry ingredients, mixing with your hands or a wooden spoon until a dough forms.

  3. 3

    Knead the Dough

Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

  4. 4

    Rest the Dough

Cover the kneaded dough with a clean kitchen towel and let it rest for at least 30 minutes.

Prepare the Filling

  1. 5

    Sauté Vegetables

In a large skillet, heat the olive oil over medium heat. Add chopped onion and garlic, sauté until translucent, about 3-4 minutes.

  2. 6

    Add Bell Pepper and Spinach

Stir in the diced bell pepper and fresh spinach. Cook until the spinach wilts, about 2-3 minutes.

  3. 7

    Mix in Eggs and Cheese

Remove the skillet from heat and let it cool slightly. Beat the eggs in a separate bowl, then mix them into the vegetable mixture along with the crumbled feta cheese. Season with black pepper.

Assemble and Cook

  1. 8

    Roll the Dough

After resting, divide the dough into smaller portions. Roll each portion into thin circles on a floured surface.

  2. 9

    Add Filling

Place a spoonful of the savory filling onto one half of each dough circle, leaving a border. Fold the dough over to create a half-moon shape, sealing the edges by pressing with a fork.

  3. 10

    Cook the Savory Pockets

In a large skillet, add a little olive oil and heat over medium heat. Cook each pocket until golden brown on both sides, about 3-4 minutes per side.
