Preparing the Home Fries

    Cook the Home Fries

    In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook for about 10 minutes until they start to soften.

    Add Vegetables

    Add chopped onion and bell pepper to the skillet. Season with salt and black pepper. Cook for an additional 10-15 minutes, stirring occasionally, until the potatoes are golden and crispy.

Making the Omelet

    Whisk the Eggs

    In a bowl, crack the three eggs and whisk them until fully combined. You can add a pinch of salt and pepper if desired.

    Prepare the Omelet Filling

    In a separate bowl, combine the diced ham, crumbled bacon, cooked sausage, and shredded cheese.

    Cook the Omelet

    In a non-stick skillet, pour in the whisked eggs and cook over medium heat. As the eggs start to set, gently lift the edges with a spatula to allow uncooked egg to flow to the edges.
