Home Fries Preparation

    Prepare the Potatoes

    Wash and dice the potatoes into small cubes.

    Cook the Potatoes

    In a skillet, heat olive oil over medium heat. Add the diced potatoes, salt, and black pepper. Cook for about 15-20 minutes, stirring occasionally until golden brown and tender.

Omelet Preparation

    Cook the Sausage

    In a separate pan, cook the Italian sausage over medium heat until browned and cooked through. Remove from the pan and set aside.

    Sauté Vegetables

    In the same pan, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until softened. Add the broccoli florets and cook for an additional 2-3 minutes.

    Whisk the Eggs

    In a bowl, crack the eggs and whisk until well combined.

    Combine Ingredients

    Add the cooked sausage and sautéed vegetables to the bowl with the eggs, mixing well.

    Cook the Omelet

    In a clean skillet, heat a little olive oil over medium heat. Pour in the egg mixture and cook until the edges start to set. Gently lift the edges with a spatula as they cook.

    Add Cheese

    Once the omelet is mostly set, sprinkle the provolone cheese over one half of the omelet. Fold the other half over the cheese and cook for another minute until the cheese is melted.

    While the omelet is cooking, toast the slices of bread in a toaster or on a skillet until golden brown.
