    Prepare the Ingredients

    Peel and slice the green plantains into 1-inch pieces. Dice the onion, bell pepper, carrot, and tomato. Mince the garlic and chop the celery stalks.

Cooking

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, bell pepper, carrot, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.

    Add the sliced green plantains to the pot. Sprinkle in the cumin, paprika, salt, and black pepper. Stir well to combine and cook for another 2-3 minutes.
