    Clean the Calamari

    Rinse the fresh calamari under cold water. Remove the skin, innards, and quills. Cut the calamari into rings about 1/2 inch thick and set aside.

    In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to ensure an even distribution of the seasonings.

    In another bowl, whisk together the eggs and milk until well combined. This will act as the wet batter for the calamari.
