Method

Preparation

  1. 1

    Prepare the Wedge Fries

Preheat your oven to 425°F (220°C). Spread the frozen wedge fries in a single layer on a baking sheet. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.

Scrambling the Eggs

  1. 2

    Whisk the Eggs

In a bowl, crack the 3 XL eggs (or egg whites if substituted) and add 2 tablespoons of milk. Whisk together until well combined.

  2. 3

    Cook the Vegetables

In a non-stick skillet, heat a tablespoon of oil over medium heat. Add the chopped bell pepper, onion, and spinach. Sauté for about 3-4 minutes until the vegetables are softened.

  3. 4

    Scramble the Eggs

Pour the egg mixture into the skillet with the sautéed vegetables. Sprinkle in the salt, black pepper, and garlic powder. Cook, stirring gently, until the eggs are just set, about 3-5 minutes. Stir in the diced tomato and cheddar cheese until melted.

Serving

  1. 5

    Plate the Dish

Once the wedge fries are done, remove them from the oven and place them in a bowl. Top with the scrambled egg mixture. Serve immediately while hot.
