    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Prepare Ramekins

    Grease four ramekins with 1 tablespoon of unsalted butter and dust with cocoa powder, ensuring the bottom and sides are well coated.

Making the Batter

    Melt Chocolate and Butter

    In a microwave-safe bowl, combine 170g of semisweet chocolate and 115g of unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

    Mix Eggs and Sugar

    In a mixing bowl, whisk together 2 large eggs, 1 large egg yolk, and 50g of granulated sugar until the mixture is pale and slightly thickened.

    Combine Mixtures

    Slowly pour the melted chocolate and butter mixture into the egg mixture, whisking continuously to combine.

    Add Flour and Flavor

    Fold in 30g of all-purpose flour, 0.5 tsp of vanilla extract, and a pinch of salt until just incorporated. Do not overmix.

Baking

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

    Bake

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft. The tops should appear set.

Serving

    Let Cool

    Remove the ramekins from the oven and let them cool for 1 minute.

    Invert and Serve

    Carefully run a knife around the edges of each ramekin to loosen the cake. Invert onto a plate and serve immediately, allowing the gooey center to flow out.
