Omelet Preparation

    Prepare the Vegetables

    Dice the onion and bell pepper into small pieces. Set aside.

    Whisk the Eggs

    In a bowl, crack the three eggs and whisk them until the yolks and whites are fully combined. Season with salt and pepper to taste.

    Cook the Omelet

    In a non-stick skillet, heat a little olive oil over medium heat. Add the diced onion and bell pepper, and sauté until they are soft, about 3-4 minutes. Pour the whisked eggs over the vegetables, allowing them to cook undisturbed for about 2 minutes.

    Add Rice and Beans

    Sprinkle the cooked rice and beans evenly over one half of the omelet. Allow it to cook for another 2-3 minutes until the eggs are set but slightly runny on top.

    Fold and Serve

    Gently fold the omelet in half over the filling and slide it onto a plate. Keep warm while you prepare the home fries.

    Prepare the Potatoes

    Wash and peel the potatoes, then cut them into small cubes (about 1/2 inch).

    In a separate skillet, heat olive oil over medium heat. Add the cubed potatoes, salt, and black pepper. Cook for 10-15 minutes, stirring occasionally, until the potatoes are crispy and golden brown on all sides.

    While the home fries are cooking, toast the slices of bread to your desired level of crispness. Spread butter or margarine on the toast to taste.
