Preparation of Batter

In another bowl, whisk together the milk, eggs, melted unsalted butter, and vanilla extract until smooth.

Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
Cooking the Cakes or French Toast

Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a bit of butter.

For cakes, pour 1/4 cup of batter onto the skillet for each cake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown. For French toast, dip slices of bread into the batter, ensuring both sides are coated, then cook in the skillet.

If desired, sprinkle blueberries or chocolate chips on top of the cakes before flipping for added flavor. For French toast, add strawberries or banana slices on top after cooking.

If adding a choice of meat, cook it in a separate pan until crispy and fully cooked, then serve alongside the cakes or French toast.
