Prepare glass
Chill a julep cup or an old-fashioned glass in the freezer for a few minutes, or fill it with ice while you prepare the drink to cool it.
Muddle blackberries and mint
Place 6 fresh blackberries and 6–8 fresh mint leaves in a cocktail shaker or mixing glass. Add the 0.5 oz fresh lime juice. Gently muddle 8–10 times until the blackberries are broken down and the mint is aromatic but not shredded.
Add spirits and syrup
Add 2 oz Jameson Irish Whiskey and 0.75 oz mint syrup to the muddled fruit and mint. Add a small handful of crushed ice (about 1/4 cup) to the shaker.
Shake and strain
Cap the shaker and give it a brisk 10–12 second shake to chill and integrate flavors. Double-strain the mixture into the chilled julep cup or old-fashioned glass filled with crushed ice, using a Hawthorne strainer and a fine mesh strainer to remove seeds and pulp.
Finish with splash and build
Top with a 0.5 oz splash of cold water or club soda to open the drink and lighten the texture. Gently stir once to combine.
Garnish and serve
Slap a mint sprig between your palms to release the oils and place it on top of the crushed ice along with a whole blackberry on a pick. Serve immediately with a short straw or a julep spoon.
