Prepare Saffron Butter

Bloom saffron
Place saffron threads in a small bowl with 2 tablespoons hot water and let sit 5–10 minutes to release color and aroma.

Make butter
In a small saucepan over low heat, melt 4 tablespoons unsalted butter with 2 tablespoons heavy cream. Stir in bloomed saffron (including liquid), lemon zest, lemon juice, 1 teaspoon salt and 1/2 teaspoon black pepper. Warm gently until combined, then remove from heat and keep warm.
Prepare Breadcrumb Topping

Heat 1 tablespoon olive oil in a small skillet over medium heat. Add 3/4 cup bread crumbs (or panko) and cook, stirring frequently, until golden brown and crisp, about 4–6 minutes. Stir in 2 tablespoons grated Parmesan (if using), 1/4 teaspoon salt and 1/8 teaspoon black pepper. Transfer to a bowl and set aside.
Cook Vegetables

Trim the asparagus: snap or cut off the woody ends (about 1–1.5 inches). If spears are thick, halve lengthwise. Trim and string snap peas and rinse both vegetables.

In a large skillet, heat 1 tablespoon olive oil over medium heat. Add the thinly sliced leek and sauté 3–4 minutes until softened and lightly translucent. Add minced garlic and cook 30 seconds until fragrant.

Finish with Saffron Butter & Calabrians

Add 1 teaspoon Calabrian chili paste and 1 tablespoon olive oil; toss briefly to distribute heat and flavor. Taste and adjust seasoning with additional salt or a squeeze of lemon if desired.
Assemble & Serve

Transfer vegetables to a serving platter or individual plates. Sprinkle the toasted breadcrumb mixture evenly over the top to add crunch.
