Preparation of Ice Cream Base

    Combine Dairy Ingredients

    In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and salt. Whisk together until the sugar is completely dissolved. Heat the mixture over medium heat until it is warm but not boiling.

    Prepare Egg Yolks

    In a separate bowl, whisk the egg yolks until they are thick and pale. Gradually add a small amount of the warm cream mixture into the egg yolks while whisking constantly to temper the eggs.

    Combine Mixtures

    Slowly pour the tempered egg yolk mixture back into the saucepan with the rest of the cream mixture, stirring constantly. Cook over medium-low heat, stirring frequently, until the mixture thickens and coats the back of a spoon (about 5-7 minutes).

    Add Vanilla

    Remove the saucepan from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

Churning and Freezing

    Churn Ice Cream

    Once the mixture is thoroughly chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until it is firm enough to scoop.
