Chocolate Cake

Vanilla Custard

Method

Chocolate Cake

  1. 1

    Preheat Oven

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. 3

    Combine Wet Ingredients

Add eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until well combined.

  4. 4

    Add Boiling Water

Carefully stir in the boiling water until the batter is smooth. The batter will be thin.

  5. 5

    Bake the Cake

Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

  6. 6

    Cool the Cakes

Remove from the oven and let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Vanilla Custard

  1. 7

    Prepare Milk Mixture

In a saucepan, combine the milk, sugar, and split vanilla bean (scrape the seeds into the mixture as well).

  2. 8

    Heat the Mixture

Heat the milk mixture over medium heat until it begins to steam but not boil. Remove from heat.

  3. 9

    Whisk Egg Yolks

In a bowl, whisk the egg yolks and cornstarch together until smooth.

  4. 10

    Combine Mixtures

Slowly pour the hot milk mixture into the egg yolk mixture while continuously whisking to temper the yolks.

  5. 11

    Cook the Custard

Return the combined mixture to the saucepan and cook over medium heat, stirring constantly until thickened (about 5-7 minutes).

  6. 12

    Finish Custard

Remove from heat and stir in butter until melted. Allow to cool before serving.

Mixed Berry Compote

  1. 13

    Combine Ingredients

In a medium saucepan, combine the mixed berries, sugar, and lemon juice.

  2. 14

    Cook the Compote

Cook over medium heat, stirring occasionally until the berries break down and the mixture thickens, about 10-15 minutes.

  3. 15

    Cool and Serve

Remove from heat and let cool. Serve over chocolate cake or vanilla custard.
