Beef Preparation

    Pat the filet mignon dry with paper towels. Rub both sides with olive oil, then season generously with salt and black pepper.

    In a cast-iron skillet over medium-high heat, add the filet mignon. Sear for 4-5 minutes on each side for medium-rare. Add rosemary and crushed garlic cloves to the skillet.

    Once the filets are seared, add butter to the skillet. Tilt the pan slightly and use a spoon to baste the filets with the melted butter for an additional 1-2 minutes.
