Crust Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix Crust Ingredients

    In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

    Bake the Crust

    Bake the crust in the preheated oven for 10 minutes. Remove and let it cool slightly while preparing the filling.

Filling Preparation

    Beat Cream Cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

    Add Sugar and Sour Cream

    Gradually add the granulated sugar and sour cream to the cream cheese, mixing until fully incorporated.

    Mix in Vanilla and Eggs

    Add the vanilla extract and mix until combined. Gradually add the eggs one at a time, mixing on low speed just until incorporated. Be careful not to overmix.

    Pour Filling into Crust

    Pour the cheesecake filling over the cooled crust in the springform pan.

    Bake the Cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

    Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight for best results.

Topping Preparation

    Wash and dry the fresh berries thoroughly.

    In a small bowl, toss the berries with powdered sugar to coat lightly just before serving.
