Method

Dough Preparation

  1. 1

    Make the Dough

In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in egg and add water gradually until a dough forms. Knead on a floured surface until smooth. Wrap in plastic and refrigerate for at least 30 minutes.

Filling Preparation

  1. 2

    Prepare the Fillings

In a skillet, cook ground beef over medium heat until browned. Add onions, bell peppers, and garlic, cooking until softened. Stir in cumin, paprika, salt, and black pepper. Remove from heat and let cool. Mix in beaten egg, cheese, spinach, mushrooms, chicken, and black beans.

Assembly and Baking

  1. 3

    Assemble the Empanadas

Preheat oven to 375°F (190°C). Roll out dough on a floured surface and cut into circles. Place a spoonful of filling on one half of each circle. Fold over and seal edges with a fork. Brush tops with beaten egg.

  2. 4

    Bake

Place empanadas on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown. Serve warm.
