    Roasting the Tomatoes

    Preheat your oven to 400°F (200°C). Halve the cherry tomatoes and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and black pepper. Roast in the oven for 20-25 minutes until they are caramelized and soft.

    Pickling the Fennel

    While the tomatoes are roasting, thinly slice the fennel bulb and shallots. In a bowl, combine the sliced fennel and shallots with the red wine vinegar, 1 tablespoon of olive oil, and a pinch of salt. Let this mixture marinate while the tomatoes roast.

    Sautéing the Spinach

    In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 3-5 minutes. Season with salt and black pepper to taste.

    Combining the Ingredients

    Once the spinach is cooked, remove it from heat. Plate the sautéed spinach, top it with the roasted tomatoes, and finish with the pickled fennel and shallots. Serve warm.
