Preparing the Home Fries

    Cook the Potatoes

    Peel and dice the potatoes into small cubes. Boil them in salted water for about 5 minutes until slightly tender. Drain and set aside.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, cooking until soft, about 3-4 minutes.

    Combine and Fry

    Add the boiled potatoes to the skillet, season with paprika, garlic powder, salt, and pepper. Fry for 10-12 minutes, stirring occasionally until golden brown and crispy.

Making the Eggs Benedict

    Toast the Muffins

    Slice the English muffins in half and toast them until golden brown.

    Poach the Eggs

    Bring a pot of water to a simmer. Crack each egg into a small bowl, then gently slide them into the water. Poach for about 3-4 minutes for runny yolks. Remove with a slotted spoon.

    Assemble

    Place a toasted English muffin half on a plate, top with a poached egg, and drizzle with hollandaise sauce. Season with salt and pepper.
