Prepare the Lentils
Rinse the red lentils under cold water and soak them in water for about 30 minutes. Drain and set aside.

Blend the Ingredients
In a food processor, combine soaked lentils, chopped onion, minced garlic, parsley, cumin, coriander, salt, black pepper, and baking powder. Blend until a coarse mixture forms.

Shape the Falafel
Using your hands, shape the mixture into small patties or balls, about the size of a golf ball.

Fry the Falafel
In a large skillet, heat olive oil over medium heat. Fry the falafel patties until golden brown on both sides, about 3-4 minutes per side.

Assemble the Pita
Serve the falafel in pita bread with hummus, fresh spinach, pickled turnip, cucumber, and feta (optional).
