Mushroom Sauté and Mornay Sauce

Method

Preparation Steps

  1. 1

    Sautéed Mushrooms

Start by cleaning the mushrooms and slicing them. Peel and finely chop the shallots and garlic. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the shallots and garlic, and sauté until translucent.

  2. 2

    Cook the Mushrooms

Add the sliced mushrooms to the skillet and cook until they are golden brown and have released their moisture, about 5-7 minutes. Season with salt and black pepper to taste. Remove from heat and set aside.

  3. 3

    Make the Mornay Sauce

In a saucepan, melt the remaining 2 tablespoons of butter over medium heat. Stir in the flour and cook for 1-2 minutes until it turns a light golden color. Slowly whisk in the heavy cream, ensuring there are no lumps. Continue to cook, whisking constantly, until the sauce thickens.

  4. 4

    Finish the Mornay Sauce

Remove from heat and stir in the grated Gruyère cheese and a pinch of nutmeg. Season with salt and pepper to taste.

  5. 5

    Combine and Serve

Add the sautéed mushrooms to the Mornay sauce and mix well. Serve hot, garnished with additional cheese or herbs if desired.
