Cherry Lime Rickey
Method
Cherry Lime Rickey
- 1
Make or measure syrups and juice
If you don't have pre-made cherry syrup, drain maraschino cherries into a small measuring cup to collect syrup (use 1/2 cup). Measure 3/4 cup fresh lime juice (about 6-8 limes depending on size). Measure 1/4 cup simple syrup (see note).
- 2
Prepare serving glasses
Fill six highball or Collins glasses about two-thirds full with ice cubes (approximately 6 cubes per glass). Add one lime wheel or wedge to each glass and one maraschino cherry if you like, leaving room for liquids.
- 3
Combine base
In a pitcher, combine 3/4 cup fresh lime juice, 1/2 cup cherry syrup, and 1/4 cup simple syrup. Stir vigorously for 10–15 seconds to combine thoroughly.
- 4
Top with soda and stir
Slowly pour 3 cups club soda into the pitcher and gently stir once or twice to avoid losing carbonation. Taste and adjust sweetness: if you prefer tarter, add an extra 1–2 tablespoons fresh lime juice; if sweeter, add 1–2 tablespoons simple syrup.
- 5
Serve
Divide the mixture evenly among the six prepared glasses (about 2/3 cup per glass). Top each glass with an additional splash of club soda if needed for fullness and a fresh maraschino cherry and lime wheel. Optionally slap a mint sprig between your palms and add to each glass for aroma.

Optional individual build
For single servings: in a glass with ice, add 2 tablespoons cherry syrup, 1 tablespoon lime juice, 1 teaspoon simple syrup, stir, then top with 1/2 cup club soda and garnish with cherry and lime.

Notes
Simple syrup: combine equal parts sugar and water, heat until sugar dissolves, cool before using. Cherry syrup: reserved maraschino cherry syrup works well; for richer flavor, simmer equal parts pitted fresh cherries and sugar with a splash of water and strain, cool before using.
