1. Prepare produce
Wash and thoroughly dry the mixed salad greens. Halve the cherry tomatoes, thinly slice the cucumber and red onion. Place the greens, tomatoes, cucumber and onion into a large chilled bowl and set aside in refrigerator while preparing dressing and bacon.
2. Assemble salad before serving
When ready to serve, add the toasted slivered almonds and half of the Parmesan to the greens. Toss gently with the dressing (see dressing directions) until evenly coated. Taste and adjust seasoning if necessary, then scatter remaining Parmesan over the top.

3. Cook bacon
In a skillet over medium heat, cook the bacon slices until crisp, about 6–8 minutes, turning occasionally. Remove bacon to a paper towel-lined plate and reserve 1 tablespoon of the rendered bacon fat. Once cool, crumble or chop the bacon into small pieces.
4. Make dressing
In a small bowl or jar combine the reserved 1 tablespoon bacon fat (warm but not smoking) with 1/4 cup extra-virgin olive oil, 2 tablespoons fresh lemon juice, 1 minced garlic clove, 1 teaspoon Dijon mustard, 1/2 teaspoon honey, 1 teaspoon red wine vinegar, 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Whisk vigorously (or shake in a lidded jar) until emulsified. Taste and adjust acidity or salt as desired. Fold in the crumbled bacon (reserve a small pinch for garnish if desired). Keep warm or room temperature.
Garlic Bread
5. Prepare and bake garlic bread
Preheat oven to 375°F (190°C). Slice the baguette lengthwise or into 1-inch slices. In a small bowl, mix 3 tablespoons softened butter with 1 minced garlic clove, 1 teaspoon chopped parsley (optional) and 1/8 teaspoon salt until combined. Spread the garlic butter onto cut sides of the bread. Place bread on a baking sheet and bake 8–10 minutes until golden and butter is melted; for crispier edges, broil 1–2 minutes more while watching carefully. Remove from oven and slice if needed.
