Blueberry Lavender Syrup

Make syrup
Combine blueberries, sugar and water in a small saucepan over medium heat.

Bring to a gentle simmer, stirring occasionally so the sugar dissolves and the berries begin to break down, about 5–7 minutes.

Add the dried culinary lavender and continue to simmer very gently for 2 minutes to infuse the floral notes. Do not boil aggressively or the lavender will become bitter.

Remove from heat and let the mixture steep for 10 minutes to deepen flavor.

Strain the syrup through a fine-mesh sieve into a bowl or jar, pressing the solids with the back of a spoon to extract liquid. Discard solids. Stir in 1 tablespoon fresh lime juice to brighten the syrup.

Prep glass and muddle
Place 8 fresh blueberries and 8–10 fresh mint leaves into a sturdy Collins glass or cocktail shaker. Add the lime juice and the blueberry lavender syrup.

Gently muddle the blueberries and mint with a muddler or the back of a spoon just enough to crush the berries and release mint oils — about 6–8 gentle twists. Avoid over-muddling the mint which can make the cocktail bitter.

Build the drink
Fill the glass about three-quarters with crushed ice (or add ice cubes). Pour in 2 oz white rum. Stir gently to combine and chill.

Top with about 2 oz club soda (or to taste) to give effervescence. Stir once gently to incorporate.

Garnish and serve
Add a lime wheel or wedge on the rim, a sprig of fresh mint, a few whole blueberries, and optionally a small sprig of fresh lavender for aroma. Serve immediately with a straw.
