Cheesy Artichoke Filling

Prepare oven and brie
Preheat oven to 375°F (190°C). If Brie is cold, let sit 10–15 minutes to soften for easier mixing. Remove and discard or reserve rind pieces if you prefer a smoother texture; reserve some rind if you want a more rustic presentation.

Mix base cheeses
In a medium mixing bowl, combine the Brie pieces, cream cheese, and mayonnaise. Use a rubber spatula or fork to mash and blend until mostly smooth but still slightly textured. The mixture should be spreadable.

Add flavorings and artichokes
Fold in the chopped artichoke hearts, grated Parmesan, minced garlic, lemon juice, salt, and black pepper. Taste and adjust seasoning; add a little more lemon or salt if needed.

Transfer and bake
Spoon the mixture into a small shallow pie dish (6–8 inch) or an ovenproof skillet, smoothing the top. Bake in the preheated oven for 15–20 minutes until the center is hot and the edges are bubbling. If you want a golden top, switch to broil for 1–2 minutes—watch carefully to avoid burning.

Rest briefly
Remove from oven and let rest 3–5 minutes; the filling will set slightly but remain creamy for dipping.

While the filling bakes, prepare the fruit. Rinse grapes and strawberries and pat dry. Hull and halve strawberries. Core and thinly slice the apple and pear. Cut fresh pineapple into bite-size chunks. Arrange all fruit on a serving platter or directly around the baked brie pie so guests can pair bites of fruit with the cheese.
Toasted Baguette & Finishing

Toast baguette slices
Arrange baguette slices on a baking sheet. Brush lightly with olive oil on both sides. Toast in the oven at 375°F (same oven as the filling) for 6–8 minutes, flipping once, until golden and crisp. Alternatively, toast in a skillet over medium heat for 2–3 minutes per side.

Finish and serve
Place the baked artichoke Brie pie on a serving board. Surround with the prepared fruit and toasted baguette slices. Drizzle honey over the top of the warm cheese if desired and sprinkle fresh thyme leaves over the cheese and fruit for aroma. Serve immediately so the Brie stays warm and creamy.
