Make the Roux
Sprinkle the flour over the sautéed vegetables and stir well to combine. Cook for about 1-2 minutes to remove the raw flour taste.

Slowly pour in the brown ale while whisking to prevent lumps. Follow with the chicken broth, stirring continuously. Bring the mixture to a simmer.

Thicken the Soup
Allow the soup to simmer for about 15 minutes, stirring occasionally until it thickens slightly.

Lower the heat and stir in the heavy cream, followed by the shredded sharp cheddar cheese. Continue stirring until the cheese is melted and the soup is creamy.

Add salt, black pepper, and paprika. Mix well to incorporate all flavors. Adjust seasoning to taste.
