Prepare the Chicken

    In a mixing bowl, combine olive oil, minced garlic, chopped fresh rosemary, salt, and black pepper. Add the chicken thighs to the mixture, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

    While the chicken is marinating, preheat your oven to 200°C (400°F).

Prepare the Sides

    Boil the Potatoes

    Wash the baby potatoes and place them in a pot of salted water. Bring to a boil and cook for about 15 minutes, or until tender. Drain and set aside.
