Preparing the Eggs

Hard Boil the Eggs
Place the 3 eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot, remove it from heat, and let it sit for 10-12 minutes. After that, transfer the eggs to a bowl of ice water to cool for about 5 minutes. Peel the eggs and set aside.
Wrapping and Breading

Prepare the Sausage Mixture
In a mixing bowl, take the 300 grams of sausage meat and season it with salt and pepper to taste.

Wrap the Eggs
Divide the sausage meat into 3 equal portions. Flatten each portion of sausage meat in your hands, then wrap it around each hard-boiled egg, ensuring it's evenly coated.

Heat the Oil
In a deep frying pan, heat 500 ml of oil over medium heat until it reaches 170°C (340°F).

Fry the Scotch Eggs
Carefully lower the breaded Scotch eggs into the hot oil. Fry them in batches for about 5-6 minutes or until golden brown and cooked through. Use a slotted spoon to remove them from the oil and place them on paper towels to drain excess oil.
Preparing MMH Sauce

Mix the Sauce
In a small bowl, combine 0.5 cups of mayonnaise, 1 tsp of hot sauce, 0.5 tsp of garlic powder, 0.5 tsp of paprika, and season with salt and black pepper to taste. Mix well until smooth.
Serving

Plate the Scotch Eggs
Serve the Scotch eggs warm with the prepared MMH sauce on the side for dipping.
