Prepare the Vegetables
Slice the green bell pepper, red bell pepper, onion, and mushrooms into thin strips.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced vegetables (green bell pepper, red bell pepper, onion, and mushrooms) and sprinkle with salt and black pepper. Cook for about 5-7 minutes, or until the vegetables are tender and slightly caramelized.

Add the Roast Beef
Once the vegetables are cooked, add the sliced roast beef to the skillet. Stir to combine and cook until the beef is heated through, about 2-3 minutes.

Assemble the Grinder
Split the hoagie rolls lengthwise without cutting all the way through. Place a portion of the beef and vegetable mixture inside each roll. Top with Swiss cheese slices.

Melt the Cheese
Place the assembled sandwiches on a baking sheet and broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly. Keep an eye on them to prevent burning.
