Soup Preparation

    Sauté the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced yellow onions and a pinch of salt. Cook for about 30-40 minutes, stirring occasionally, until the onions are caramelized and golden brown.

    Add Garlic and Deglaze

    Add the minced garlic to the pot and sauté for another 2 minutes. Pour in the dry white wine and scrape up any brown bits from the bottom of the pot. Let it simmer for about 5 minutes.

    Combine Broth and Seasonings

    Add the beef broth, thyme, bay leaf, salt, and black pepper to the pot. Stir well and bring the mixture to a boil. Reduce the heat and let it simmer for 30 minutes.

Serving Preparation

    Prepare the Baguette

    While the soup is simmering, preheat your oven to 350°F (175°C). Arrange the baguette slices on a baking sheet and toast them in the oven for about 10 minutes or until golden and crispy.

    Assemble the Soup

    Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls. Place a few toasted baguette slices on top of each bowl and generously sprinkle with shredded Swiss cheese.

    Broil and Serve

    Place the bowls under the broiler for 3-5 minutes, or until the cheese is bubbly and golden brown. Remove from the oven, garnish with chopped parsley, and serve hot.
