Prepare the Chicken
Cut the chicken breasts into thin strips, about 1 inch wide. Pat them dry with paper towels.

Bread the Chicken
Dredge each chicken strip in the flour, shaking off the excess. Then dip it into the beaten eggs, allowing any excess egg to drip off. Finally, coat the strip with the bread crumb mixture, pressing lightly to ensure the crumbs stick.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded chicken strips in a single layer, cooking in batches if necessary. Fry for 4-5 minutes per side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Prepare the Potatoes
Peel the potatoes and cut them into long strips, about 1/4 inch thick. Soak the potato strips in cold water for 30 minutes to remove excess starch.

Fry the Potatoes
Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C). Drain the potatoes and pat them dry with paper towels. Carefully add the potato strips to the hot oil in batches and fry for 5-7 minutes or until golden brown. Remove and place on paper towels to drain. Season with salt while still hot.
