Pork Carnitas Preparation

Prepare the Pork
In a slow cooker, place the pork shoulder and cover with orange juice, lime juice, minced garlic, ground cumin, salt, black pepper, and bay leaves. Make sure the pork is well coated with the marinade.

Cook the Pork
Cover the slow cooker and cook on low heat for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Discard the bay leaves.

Crisp the Pork (Optional)
For extra flavor, you can transfer the shredded pork to a baking sheet and broil it in the oven for 5-10 minutes until the edges are crispy.

Prepare the Tortillas
Warm flour tortillas in a skillet or microwave until soft and pliable.

Fill the Tacos
On each tortilla, layer some shredded pork, followed by black beans, pico de gallo, shredded green cabbage, and chopped cilantro.

Add the Sauce
In a small bowl, mix together sour cream and hot sauce. Drizzle this sauce over the filled tacos.

Serve
Serve the tacos immediately with extra lime wedges and hot sauce on the side if desired.
