Prepare the Cajun Remoulade

Make the Remoulade
In a medium bowl, combine mayonnaise, Dijon mustard, hot sauce, Cajun seasoning, and lemon juice. Mix well until smooth and set aside.
Cook the Bacon

Prepare the Burger Patties

Shape the Patties
In a large bowl, combine ground beef, Cajun seasoning, salt, and black pepper. Mix until just combined and form into two equal patties.

Cook the Patties
In the same skillet used for the bacon, increase the heat to medium-high. Cook the burger patties for about 4-5 minutes on each side, or until desired doneness. In the last minute of cooking, top each patty with two slices of pepperjack cheese to melt.
Assemble the Burger

Build the Burger
Toast the burger buns lightly if desired. Spread a generous amount of the Cajun remoulade on the bottom half of each bun. Place a cooked burger patty on each bun, top with two slices of crispy bacon, and cover with the top half of the bun.
