Preparing the Fries

    Cutting the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to create fries.

    Soaking the Potatoes

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Drying the Fries

    Drain the soaked fries and pat them dry with paper towels to prevent oil splatter during frying.

    Heating the Oil

    In a large, heavy pot, heat the vegetable oil to 350°F (175°C) over medium-high heat.

    Frying the Fries

    Carefully add the dried potato strips to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes per batch.

    Draining and Seasoning

    Remove the fries from the oil using a slotted spoon and place them on a paper towel-lined plate. Sprinkle with salt while still hot.

    Place a generous amount of the hot, crispy fries on a serving plate and scatter cheese curds evenly on top.
