Method

Whole Grilled Sunburst Trout

    Prepare the Trout

    Clean the trout thoroughly under cold water. Pat it dry with paper towels and make 3 diagonal cuts on each side of the fish.

    Marinate the Trout

    In a small bowl, mix olive oil, lemon juice (from half the lemon), chopped parsley, salt, and black pepper. Rub this marinade all over the trout, including inside the cavity. Let it marinate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat (around 375°F or 190°C).

    Grill the Trout

    Place the trout on the grill and cook for about 6-8 minutes on each side, or until the fish flakes easily with a fork.

Salad of Radicchios

    Prepare the Radicchio

    Wash the radicchio and cut it into thin strips. Place it in a bowl.

    Dress the Salad

    In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper. Pour this dressing over the radicchio and toss well to combine.

    Make the Brown Butter

    In a small saucepan over medium heat, melt the unsalted butter. Continue to cook, swirling the pan occasionally, until the butter turns golden brown and has a nutty aroma. Be careful not to burn it.

Benne (Sesame) Seeds

    Toast the Benne Seeds

    In a dry skillet over medium heat, toast the benne seeds until they are golden and fragrant, about 3-5 minutes. Stir frequently to prevent burning.

Lime Preserved Ramp Hushpuppies

    Prepare the Hushpuppy Batter

    In a mixing bowl, combine cornmeal, flour, baking powder, salt, lime zest, and chopped ramps. Stir well to combine.

    Gradually add water to the dry ingredients, mixing until a thick batter forms.
