    Prepare the Cauliflower

    Preheat your oven to 425°F (220°C). Cut the cauliflower into bite-sized florets.

    Season the Cauliflower

    In a large bowl, combine the cauliflower florets with olive oil, Vadouvan spice blend, salt, and black pepper. Toss until the florets are evenly coated.

    Roast the Cauliflower

    Spread the seasoned cauliflower florets on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and tender, turning halfway through.

    Prepare the Dip

    While the cauliflower is roasting, in a medium bowl, mix together the sour cream, cream cheese, onion powder, garlic powder, chives, and lemon juice until smooth and well combined.

    Serve

    Once the cauliflower is done roasting, remove it from the oven and let it cool slightly. Serve the hot vadouvan fried cauliflower with the sour cream and onion dip.
