Sweet Potato Roll Preparation

    Prepare the Sweet Potatoes

    Peel and chop the sweet potatoes into chunks. Boil them in a pot of salted water until fork-tender, about 15-20 minutes. Drain and mash the sweet potatoes until smooth.

    Make the Batter

    In a large mixing bowl, combine the mashed sweet potatoes, all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon. Mix well until combined.

    Add Wet Ingredients

    In a separate bowl, whisk together the melted butter, eggs, and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined.

    Prepare the Catfish

    Season the Chesapeake catfish fillets with salt and pepper. Heat a skillet over medium heat and cook the catfish for about 4-5 minutes on each side until cooked through. Remove from heat and flake into pieces.

    Assemble the Roll

    Preheat the oven to 350°F (175°C). Spread half of the sweet potato batter into a greased baking dish. Evenly distribute the flaked catfish and preserved ramps on top of the batter. Spoon the remaining batter over the filling.

    Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

    Allow the sweet potato roll to cool for about 10 minutes before slicing. Serve warm or at room temperature.
