Instructions
- 1
Harvesting Grapes
Select and harvest 2 kg of ripe Sauvignon Blanc grapes. Ensure they are free from rot and disease.
- 2
Crushing and Pressing
Crush the grapes to release the juice. Use a wine press to extract the juice from the crushed grapes, ensuring no solids remain.
- 3
Juice Preparation
In a clean fermenting vessel, combine the extracted grape juice with 1 liter of water. Adjust the acidity if necessary.
- 4
Adding Yeast
Sprinkle 10 grams of yeast over the juice mixture. Let it sit for 10 minutes before stirring gently to incorporate the yeast.
- 5
Fermentation
Cover the fermenting vessel with a clean cloth and allow the mixture to ferment at 18-22°C (64-72°F) for 2-4 weeks, depending on desired flavor profile. Stir gently every few days.
- 6
Monitoring Fermentation
Check the specific gravity regularly to ensure fermentation is complete. It should stabilize around 0.990-1.000.
- 7
Adding Sulfur Dioxide
Once fermentation is complete, add 50 mg/l of sulfur dioxide to the wine to prevent oxidation and spoilage.
- 8
Aging
If desired, add 30 grams of oak chips to the wine for additional flavor. Allow the wine to age for at least 3 months in a cool, dark place.
