Grilled Maryland Rockfish

    Marinate the Rockfish

    In a small bowl, mix the miso paste, 2 tablespoons of olive oil, salt, and black pepper to form a marinade. Rub this marinade over the rockfish fillets, ensuring they are well coated. Let them marinate for at least 30 minutes in the refrigerator.

    Prepare the Kale

    While the fish is marinating, wash and dry the amara kale. Remove the stems and tear the leaves into bite-sized pieces. In a separate bowl, toss the kale with 1 tablespoon of olive oil, salt, and pepper. Set aside.

    Prepare the Orange and Jalapeño

    Peel the Cara Cara oranges and segment them, removing any seeds. Finely chop the jalapeño, removing the seeds if you prefer less heat. Combine the orange segments and jalapeño in a small bowl and set aside.

    Grill the Rockfish

    Preheat the grill to medium-high heat. Oil the grill grates to prevent sticking. Place the marinated rockfish fillets on the grill and cook for about 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.

    Sauté the Kale

    In a skillet over medium heat, add a splash of olive oil and sauté the prepared kale for 3-4 minutes until it wilts and becomes tender. Stir in the fresh dill at the end of cooking.

    Serve

    On a plate, serve a portion of the sautéed kale, top with the grilled rockfish, and garnish with the Cara Cara orange and jalapeño mixture.
