Cooking Instructions

  1. 1

    Prepare the Parsnip Purée

Peel and chop the parsnips into small pieces and place them in a pot of boiling salted water.

  2. 2

    Cook the Parsnips

Boil the parsnips for about 15-20 minutes or until they are tender. Drain and transfer to a blender.

  3. 3

    Blend the Parsnips

Blend the cooked parsnips with 2 tablespoons of olive oil, a pinch of salt, and a bit of water if needed until smooth. Set aside.

  4. 4

    Prepare the Scallops

Pat the scallops dry with paper towels. Season with salt and black pepper on both sides.

  5. 5

    Grill the Scallops

Heat a grill or grill pan over medium-high heat. Add 1 tablespoon of olive oil to the grill.

  6. 6

    Cook the Scallops

Place the scallops on the grill and cook for about 2-3 minutes on each side, until they are golden brown and opaque in the center.

  7. 7

    Prepare the Country Ham

While the scallops are grilling, in a separate skillet, lightly sauté the country ham slices until they are crispy.

  8. 8

Prepare the Coffee and Truffle Sauce

In a small saucepan, combine the brewed coffee and preserved black truffle. Simmer for 5 minutes to infuse the flavors.

  9. 9

    Plate the Dish

On each plate, spread a generous spoonful of parsnip purée, top with grilled scallops, add crispy country ham, and drizzle with coffee and truffle sauce.
