Prepare the Parsnip Purée
Peel and chop the parsnips into small pieces and place them in a pot of boiling salted water.

Cook the Parsnips
Boil the parsnips for about 15-20 minutes or until they are tender. Drain and transfer to a blender.

Blend the Parsnips
Blend the cooked parsnips with 2 tablespoons of olive oil, a pinch of salt, and a bit of water if needed until smooth. Set aside.

Prepare the Scallops
Pat the scallops dry with paper towels. Season with salt and black pepper on both sides.

Grill the Scallops
Heat a grill or grill pan over medium-high heat. Add 1 tablespoon of olive oil to the grill.

Prepare the Coffee and Truffle Sauce
In a small saucepan, combine the brewed coffee and preserved black truffle. Simmer for 5 minutes to infuse the flavors.

Plate the Dish
On each plate, spread a generous spoonful of parsnip purée, top with grilled scallops, add crispy country ham, and drizzle with coffee and truffle sauce.
