    Prepare the Sugar Toads

    Rinse the sugar toads (frog legs) under cold water and pat them dry with paper towels. Season with salt and black pepper on both sides.

    Dredge in Flour

    Place the all-purpose flour in a shallow dish. Dredge each sugar toad in the flour, shaking off any excess.

    Heat the Oil

    In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Sugar Toads

    Carefully add the floured sugar toads to the hot oil in batches. Fry for 3-4 minutes per side, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Prepare the Winter Greens

    In a separate pan, sauté the winter greens in a small amount of oil over medium heat until wilted, about 5-7 minutes. Season with salt to taste.

    Assemble the Dish

    On a serving plate, arrange the sautéed winter greens. Top with the crispy fried sugar toads, drizzle with hot honey, and sprinkle crumbled feta cheese and benne seeds over the top.
