Preparation of Eggs

    Hard Boil the Eggs

    Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium heat. Once boiling, cover the pot, remove it from the heat, and let it sit for 10-12 minutes.

    Cool the Eggs

    After the time is up, transfer the eggs into a bowl of ice water to cool for about 5 minutes. This will make peeling easier.

    Peel the Eggs

    Once cooled, peel the eggs and slice each egg in half lengthwise. Carefully remove the yolks and place them in a mixing bowl.

Filling Preparation

    Prepare the Filling

    To the mixing bowl with the egg yolks, add the flaked smoked trout, mayonnaise, Dijon mustard, fresh lemon juice, salt, black pepper, and diced pickled jalapeño. Mix until smooth and creamy.

Assembly

    Fill the Egg Whites

    Using a spoon or a piping bag, fill the hollowed egg whites with the prepared filling.

    Garnish

    Sprinkle the filled eggs with fresh dill and capers before serving.
