Preparing the Tartine Base

Toast the Sourdough
Preheat your oven to 375°F (190°C). Lay the sourdough slices on a baking sheet and brush both sides lightly with olive oil. Toast in the oven for about 10 minutes, flipping halfway, until golden and crispy.
Preparing the Toppings

Prepare the Kohlrabi
Peel the kohlrabi and slice it thinly using a mandoline or a sharp knife. Set aside.

Assemble the Tartine
Spread a generous layer of ricotta cheese on each toasted slice of sourdough. Top with the kohlrabi slices, followed by dollops of n'duja. Drizzle hot honey over the top to taste.

Garnish with Mint and Dai Zai
Finish the tartine by adding fresh mint leaves and daikon sprouts for a refreshing crunch. Serve immediately.
