Burger Patties

Form patties
Divide the 1 lb ground beef into two equal portions (about 8 ounces each). Gently form each portion into a loose patty about 3/4 inch thick and slightly wider than your bun (they will shrink while cooking). Make a shallow 1⁄2-inch dimple in the center of each patty with your thumb to help them cook flat.

Season patties
Sprinkle 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper evenly on each side of both patties just before cooking. (Reserve the remaining salt and pepper in case you want to adjust afterward.)

Cook patties
Heat a large skillet or cast-iron pan over medium-high heat until hot. Add 1 tablespoon neutral oil and swirl to coat. Place the patties in the pan, leaving space between them. Cook undisturbed 3–4 minutes until a brown crust forms. Flip and cook another 2–3 minutes for medium (adjust 1–2 minutes less for rare, 2–3 minutes more for medium-well). During the last 30–45 seconds of cooking, place 1 American cheese slice on each patty to melt. Remove patties to a plate and tent loosely with foil to rest for 2–3 minutes.

Prepare buns
While the patties rest, split the 2 buns and spread about 1/2 tablespoon softened butter on each cut side. Return the skillet to medium heat (wipe out any excess oil if desired) and place buns cut-side down. Toast 1–2 minutes until golden and slightly crisp. Remove from pan.

Assemble burgers
Place a toasted bottom bun on your plate. Spread 1/2 tablespoon yellow mustard on the bottom bun, then set the cheeseburger patty on top. Add 3 dill pickle slices over the cheese, then spread ~1/2 tablespoon ketchup on the top bun. Optionally add shredded iceberg (about 1/4 cup) and a few thin red onion slices (about 2 tablespoons) on top of the pickles or on the top bun according to preference. Close with the top bun and serve immediately.

Taste and adjust
If desired, sprinkle a small pinch of the remaining kosher salt and black pepper over the assembled burger to taste. Serve with fries or a simple side.
