In a medium bowl combine the shredded Monterey Jack and cheddar cheeses. Add the shredded cooked chicken, roasted red pepper slices, sliced green onions, chopped cilantro, and minced jalapeño if using. Toss gently to combine.

Sprinkle the ground cumin, smoked paprika, kosher salt, and black pepper over the mixture. Fold everything together so the spices are evenly distributed. Taste a small pinch and adjust salt if needed.
Assemble Quesadillas

Spoon roughly 1/4 of the filling mixture over half of the tortilla, spreading it evenly but leaving about 1/2 inch clear at the edge so it seals. Fold the other half of the tortilla over the filling to create a half-moon quesadilla. Repeat to assemble remaining quesadillas.

Flip and cook another 2 minutes on the second side until golden and the cheese is fully melted. Reduce heat slightly if the tortilla browns too quickly before the cheese melts. Transfer cooked quesadilla to a cutting board and let rest 1 minute, then cut into 3 wedges. Repeat with remaining assembled quesadillas.

Arrange quesadilla wedges on a plate. Add a dollop of sour cream, a spoonful of pico de gallo or salsa, and avocado or guacamole on the side. Garnish with extra cilantro and a squeeze of lime over the quesadillas just before serving.
