Method
Prepare the egg salad
- 1
Boil eggs
Place 4 large eggs in a saucepan and cover with cold water by about 1 inch. Bring to a gentle boil over medium-high heat. Once boiling, reduce heat to low and simmer for 10 minutes for firm yolks. Remove from heat and transfer eggs to an ice bath for 5 minutes to stop cooking. Peel and coarsely chop.
- 2
In a mixing bowl combine the chopped eggs with 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 tablespoon thinly sliced pickled okra, 2 tablespoons thinly sliced green onion, and 1 teaspoon finely chopped fresh dill (or 1/2 teaspoon dried). Mix gently until combined but still a little chunky.
- 3
Season the egg salad with 1 teaspoon kosher salt, 1 teaspoon cracked black pepper, and 1 teaspoon hot sauce. Taste and adjust seasoning — add up to 1 tablespoon more mayonnaise if you prefer a creamier texture or a splash of buttermilk (about 2 tablespoons) if you want it slightly tangy and looser.
Prepare other sandwich components
- 4
If using bacon: cook 4 strips of bacon in a skillet over medium heat until crisp, about 6–8 minutes, turning occasionally. Drain on paper towels and keep warm. If you prefer, cook bacon in a 400°F (200°C) oven for 12–15 minutes on a rack for even crisping.
- 5
Take 8 slices of soft white sandwich bread or brioche and spread about 1/2 tablespoon softened butter on one side of each slice. Toast the buttered side in a skillet over medium heat until golden and crisp, about 2 minutes per side, or use a griddle. Toasting adds a slight crunch and prevents sogginess from the egg salad.
- 6
Assemble sandwiches
- 7
Lay four toasted bread slices buttered-side down. Divide the egg salad evenly among them, about 3/4 cup of salad per sandwich (adjust as desired).
- 8
- 9
Sprinkle a tiny pinch (about 1/8–1/4 teaspoon) of smoked paprika or pimentón over the filling for a warm, smoky note. Add a small handful (about 2 tablespoons) of microgreens or a couple of butter lettuce leaves for freshness and texture.
- 10
Close the sandwich with the remaining toasted bread (buttered side up) and press gently. Trim crusts if desired, then cut each sandwich in half diagonally for serving.
Finish and serve
- 11
Serve the Sunshine in Georgia Sandwich immediately while the bread is still slightly warm and crisp. Accompany with extra pickle slices and a light green salad or kettle chips for contrast. Leftover egg salad can be refrigerated in an airtight container for up to 3 days.
