Prepare the Chicken Confit

Prepare Ingredients
Start by gathering all the ingredients. Pat the chicken thighs dry with paper towels, and season them with salt and black pepper.

Cook the Chicken
In a large saucepan, combine the chicken thighs, olive oil, garlic cloves (smashed), and thyme. Ensure that the chicken is fully submerged in the oil.

Slow Cook
Cook the chicken on low heat for about 2-3 hours until tender. Alternatively, you can cook in a 90°C (194°F) oven for the same time.

Shred the Chicken
Once cooked, remove the chicken from the oil and let it cool slightly. Shred the chicken using two forks.
Assemble the Sliders

Slice the Buns
Carefully slice each Hawaiian bun in half to create the top and bottom halves for the sliders.

Add Chicken
Take a bottom half of a bun, add a generous portion of the shredded confit chicken on top.

Layer with Cheese and Fig Jam
Place a slice of brie cheese over the chicken, then add a dollop of fig jam on top of the cheese.

Top with Arugula
Add a handful of fresh arugula on top of the fig jam.

Complete the Sliders
Finish by placing the top half of the bun over the arugula. Repeat for all buns.
